Spatchcocking from Episode 35

First, get a good pair of poultry shears. In Bossy's case, she offers you a choice between the ones that her dog Toby chewed the handled of or the ones that have a broken tips. It's always good to have options.

Cut the backbone out of the chicken starting from the tail end and working your way up, then repeat on the other side. Voila, your bird has been spatchcocked!
